Born from Friendship
SushiDili was born from a simple conversation between friends. While exploring the cuisine of Dili, a friend mentioned he knew how to make sushi. Jokingly, the reply came: "Then let's open a sushi restaurant!"
What started as a light and unpretentious idea quickly took shape. We envisioned something small, simple, and well-organized. Our first sushi dinner at the Bistro was an absolute success, confirming that this dream could become reality.
Our Culinary Journey
From the beginning, we wanted to take our project even further. After training the team in Brazilian-style sushi, we invited an international chef from Penang, Malaysia, with experience in Japan and Europe, to work with us and share his refined techniques.
But we felt something was still missing. So we brought in a talented chef from Jakarta, Indonesia, who stayed with us for three months, adding a new style and contributing unique recipes that enriched our menu.
After almost a year of intensive training with three chefs from different backgrounds—each contributing their best talent and flavor—we finally achieved what we envisioned: a complete, authentic menu full of personality.
